Huitlacoche
Events
In
2003, Professor Lydia Zepeda, funded by the UW Center for World Affairs
and the Global Economy, sponsored three cooking demonstrations to introduce
huitlacoche to Madison:
- A Chef
Demonstration in June 2003 featuring the creations of Chef Robert
Hughes
- A Community
Cooking Demonstration held at Mercado Marimar featuring traditional
Mexican dishes prepared by local Mexican residents
- A Cooking
Demonstration at the Food for Thought Festival featuring traditional
Mexican and gourmet fusion dishes
In
2005, the second annual Huitlacoche Festival was held at the Troy Gardens
Savor the Summer Festival. Madison residents turned out in early August
to taste huitlacoche empanadas and huitlacoche lasagna, and to listen
to Latino music. This event was very successful at getting the word out
to the Madison community about the availability of huitlacoche.
